Peanut Butter Oatie Bars

This recipe is based on an old recipe from David Lebovitz, who calls these ‘granola bars,’ which I find quite amusing given their cookie-like contents. Whatever you call them, they are DELICIOUS. The Gentleman eats them straight from the freezer, as they’re very chewy, so when the stash runs out, they must be replaced. Last night, I did just that.

Peanut Butter Oatie Bars

  • 4.5 c. oats
  • 1.5 tsp. ground cinnamon
  • 1.5 tsp. baking soda
  • 1 tsp. ground ginger
  • 1/2 tsp. salt
  • 8 T. unsalted butter, room temperature
  • 1 1/3 c. brown sugar
  • 1/4 c. sugar
  • 3 eggs
  • 1/2 c. smooth peanut butter
  • 1 tsp. vanilla
  • 1/2 c. chocolate chips
  • 1/2 c. dried goji berries
  • 1/2 c. dried cranberries
  • Flaky sea salt
  1. Preheat oven to 350F (180C). Grease a 9×13″ pan, set aside.
  2. In a medium bowl, combine oats, cinnamon, baking soda, ginger, and salt. Set aside.
  3. In a large bowl, cream together butter, brown sugar and sugar until fluffy.
  4. Mix in eggs, one at a time until combined.
  5. Mix in peanut butter and vanilla.
  6. Slowly mix in the oat mixture.
  7. Mix in the chocolate chips, goji berries, and cranberries until just combined.
  8. Spread mixture into prepared baking dish.
  9. Sprinkle top lightly with flaky sea salt.
  10. Bake about 25 minutes until set.
