Chocolate Mascarpone Mousse

She may not look like much, but it’s what inside that counts- isn’t that usually the case? This mousse was a labor of love to not waste a cup of extra mascarpone that was kicking around the fridge…the results were more spectacular than anything I could have hoped for! The word “bangin'” comes to mind and we enjoyed sneaking spoonfuls throughout the weekend. Rich, chocolatey, but not too sweet, this truly is an incredible recipe that I’ll be falling back to again and again.

Chocolate Mascarpone Mousse

  • 170g dark chocolate bar, broken into pieces
  • 1/4 c. sugar
  • 2 tsp. vanilla
  • 1/3 c. heavy cream
  • 3/4 c. mascarpone
  1. In a medium bowl combine dark chocolate pieces, sugar, and vanilla.
  2. In a small bowl, pour the cream and microwave until steaming, 60-90 seconds.
  3. Pour cream over chocolate mixture and stir until it is melted and smooth.
  4. Whisk in marscarpone until smooth.
  5. Place in refrigerator to set.
