One sunday morning reading about cooking quickly stirred my stomach and had me in the kitchen trying the latest Pinterest inspired breakfast quesadilla. It was fun to watch it all come together and was massively delicious to boot. We could have shared one as it was so loaded with toppings! (Naturally, I made two).

…and cut!

Easy Breakfast Quesadilla
- 1/2 T. butter
- 1/2 tomato, sliced
- 1/4 c. crumbled bacon or sausage
- 2 eggs
- 1 flour tortilla
- 1/4 c. shredded cheddar or other cheese
- In a large skillet that will fit a tortilla flat, melt butter over medium heat, spreading over pan bottom.
- Place tomato slices and bacon throughout bottom of the pan.
- Pour two scrambled eggs over the bacon and tomatoes. Sprinkle with salt and pepper. Allow to cook until set, tucking any loose egg under the omlet so it cooks.
- Place one flour tortilla on top of the egg and cook another minute until the two are connected.
- Flip the tortilla egg over and sprinkle immediately with cheese.
- Fold in half and cut into triangles.
