Renting a house in Puglia was one of the best vacations we’ve done. Having no oven and only a bbq was a fun challenge of planning side dishes and one of the standouts was this refreshing dish of grilled peaches, fresh tomatoes plated on a bed of creamy Stracciatella and drizzled with hot honey. Topped further with chopped nuts and basil, this dish really hits all of the creamy, crunchy, hot, savory, sweet notes in one bite. The

Puglia Peaches
- 3 peaches, sliced
- 1 tomato, sliced
- 1/2 container (~4oz) of strachiatella
- 1-2 T. hot honey (or regular honey mixed with chili flakes)
- 1/3 c. chopped pistachios or almonds
- Sprig of fresh basil leaves
- Grill peaches for just a few moments, until just soft. Set aside to cool.
- Slice tomato and allow to drain on a paper towel. Sprinkle with salt and pepper.
- On a large plate, spread the Stracciatella.
- Top with peaches and tomatoes, alternating in concentric circles.
- Drizzle with hot honey.
- Sprinkle with chopped nuts and then add a few leaves or sprig of basil.
