Orange Ricotta Cookies

In an effort not to waste a container of ricotta that was nearly out of date, I whipped up a batch of Cooking Classy’s Orange Ricotta Cookies. Game changer! The gentleman has been inhaling them as their chocolate and bright combo is sure to make any dreary winter day better. Find my slight modifications below for this new bake going into regular rotation.

Orange Ricotta Cookies

  • 2 c. flour
  • 1.5 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1/2 c. softened butter
  • Zest from one orange
  • 1 egg
  • 1 c. ricotta
  • 1 tsp. vanilla
  • 1/2 bag of chocolate chips.

Glaze

  • 3/4 c. powdered sugar
  • Zest from one orange
  • Juice from one half of a fresh orange
  1. Mix together flour, baking powder, and salt. Set aside.
  2. With an electric mixer, combine sugar, butter, and orange zest.
  3. Mix in one egg.
  4. Mix in ricotta and vanilla.
  5. Add flour until just combined.
  6. Stir in chocolate chips.
  7. Chill dough for two hours.
  8. Preheat oven to 350F and drop tablespoon sized cookies onto parchment-lined baking sheets.
  9. Bake 12 minutes, until just browned.
  10. While baking, mix glaze ingredients.
  11. Cool cookies.
  12. Drizzle with orange glaze.
