Peanut Butter Cookies

A recipe so nice, I’ve made it twice (this week). (Don’t worry, mostly to distribute to friends and colleagues). The basis of this is Ina’s recipe, but it has been modified a bit for ultimate enjoyment and accolades from your friends and family. The need to try this came from the realization that I had all these ingredients on hand already, and you probably do too.

Peanut Butter Cookies

  • 1 c. butter, softened
  • 1.5 c. sugar
  • 3/4 c. brown sugar
  • 2 eggs
  • 1 c. chunky peanut butter
  • 2 tsp. vanilla extract
  • 2.5 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. chocolate chunks
  1. Preheat oven to 350F.
  2. Combine butter and sugars with an electric mixer.
  3. Mix in eggs.
  4. Add peanut butter and vanilla.
  5. Sift flour, baking powder, and salt together in a small bowl.
  6. Slowly add dry ingredients to wet with mixer.
  7. Stir in chocolate chips.
  8. Bake 15-17 minutes. They will look underdone. (I think 15 min is perfect). Let them live as they will cool into chewy, slightly crispy wonders.
