Last night I gave this recipe a go in hopes that the cookies could be a contender for this year’s Christmas plate. They very well could be with their salty, chewy, just a hint of pistachio goodness. This lovely recipe comes from Also the Crumbs Please and made 19 large cookies. They spread quite a bit, so be sure to leave room on the tray.

Chewy Pistachio Cookies
- 1/2 c. ground pistachios (pulsed in the food processor)
- 1 c. flour
- 1 tsp. cornstarch
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. butter, at room temperature
- 3/4 c. sugar
- 1/4 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 c. chopped pistachios
- 1/2 c. chocolate chips
- In a small bowl, combine flour, ground pistachios, cornstarch, baking soda, and salt. Set aside.
- In a large bowl, cream the butter, sugar, and brown sugar together until light and fluffy.
- Add egg and vanilla until combined.
- Slowly add in flour mixture until just combined.
- Mix in chopped pistachios and chocolate chips.
- Cover bowl of dough and refrigerate 2 hours.
- Preheat oven to 350F and prepare two baking sheets with parchment paper.
- Scoop cookies onto sheets and sprinkle with sea salt if desired.
- Bake ~11 minutes.
