Maybe you’ve seen that video going around IG and Tik Tok of ribs wrapped around a pineapple. I had seen the video so many times that I had to try for myself. While there wasn’t originally a recipe (at least not that I found) I sort of made up my own and they were INCREDIBLE.
Here’s the thing though…. ribs don’t bend to wrap around a pineapple. At least mine didn’t, but I also didn’t have the grill skewers to secure them properly. So my ribs took it easy and laid flat in a foil-lined pan. Pineapple on top to self baste these bad boys.

The finished product was something to behold and made for incredible leftovers, especially with a side of fried rice.


Social Media Pineapple Ribs
- 2 racks of ribs
- 1 pineapple, with skin and top discarded
- 1/4 c. bbq sauce
- 1/2 c. brown sugar
- 2 T. chili powder
- 2 T. paprika
- 2 T. garlic powder
- Salt & pepper
- 3 large scallions, sliced, to garnish
- Remove silver skin from ribs and sprinkle with salt and pepper. Set aside.
- Make ‘rib rub’ by combining brown sugar, chili powder, paprika, and garlic powder. Rub onto both sides of ribs and refrigerate until ready to use- from 2-24 hours.
- Preheat oven to 275F.
- Line a roasting pan with aluminum foil.
- Place ribs meat side down in pan so that concave side is facing up.
- Slice pineapple in half and place one half on each rack of ribs. Using a pastry brush, paint pineapple with bbq sauce.
- Wrap the whole bit up with aluminum foil
- Bake 3-3.5 hours until meat is very tender, nearly falling off of the bones.
- Chop pineapple into chunks and place on plate. Hack ribs into maneage portions – 2-3 ribs- and place in center. Pour any extra juice from pan on top of it all.
- Garnish with scallions and serve with fried rice.
